Ketupat Lodeh (GF/DF)
Lodeh is a vegetable stew popular in South East Asian countries. Typical vegetables used in the dish include young jackfruit, Japanese eggplant, chayote, long beans, tofu, hard boiled egg, and ketupat (rice cake cooked in a woven palm leaf pouch). There are two main variants of lodeh based on the color of the soup, white and yellow. At one95 kitchen, we will be making the yellow variant.
Lodeh is an essential part of a ceremony called Slametan, to ward off possible danger and disaster. People often communally cook lodeh for the ceremony. It is believed this can deter natural disasters such as wind storm, earthquake, volcanic eruption, drought, and plaque.
